Granola: It’s healthy, crunchy and delicious. To some, making it from scratch may seem daunting… but the great thing is, it’s simple to make!
Mix up a batch using whatever dried fruits and nuts you like. Then just pop it in the oven, let cool, store in a container, and you will have a great addition to yogurt, ice-cream or just a snack all on its own.
I like using Martha Stewart’s Almond-Coconut Granola as a base for my granola. Then I add different combinations of dried fruit or nuts. This time I added pistachios and dried blueberries.
2 tablespoons unsalted butter 2 tablespoons honey 1/4 cup packed light-brown sugar 1 1/2 cups old-fashioned rolled oats 1/3 cup slivered almonds (or other nut of choice) 1/4 cup sweetened shredded coconut 1/2 cup dried blueberries
- Melt together butter and honey in a small saucepan over low heat. Add sugar; stir until sugar has dissolved, about 2 minutes. Remove from heat. Stir in 2 tablespoons water. Stir together oats, nuts, dried fruits and coconut in a large bowl.
- Pour butter mixture over oat mixture; stir until combined.
- Bake granola in a 325-degree oven (spread granola out on a baking sheet), stirring often, until golden, twenty-five to thirty minutes. Let cool and store in air-tight container.
